VISUAL PHASE: Wine of elegant topaz/amber color
OLFACTORY PHASE: Powerful and surprising freshness on the nose with an aromatic background of toasted hazelnuts. Elegant aroma of dried peach, caramelized orange and hazelnut. Pleasant toffee and caramel bouquet.
GUSTATIVE PHASE: Its entry into the mouth is pleasant, with a curious note of salty almond at the beginning and with balanced acidity. Its development is complex and suggestive, highlighting a dry finish and a prolonged aftertaste in which notes of dried fruits and winey wood return.
PAIRING: Iberian Ham, fried fish, shellfish, smoked dishes, cured cheeses, white meats, blue fish or spicy dishes.
SERVING TEMPERATURE: 10º to 12º C. Use a glass of white wine.
Amontillado is a very unique wine due to its double aging process: first under the veil of flor, typical of Fino, followed by a period in which the flor disappears and the wine is exposed to oxidation. Made from palomino grapes, this fusion of aging processes makes amontillado wines extraordinarily complex and intriguing.
The quality of this Amontillado is internationally known and comes from the family's founding solera, from which we bottle a limited series of bottles manually and directly from the butt.
